AlipĂșs Mezcal originated in 1999 as a âsocial impact projectâ that sought to support traditional producers and their lands in a number of regions.
Don Cosme Hernandez and his son Cirilo make the AlipĂșs San Baltazar mezcal. They live in the high altitude town of San Baltazar Guelavila. Using Espadin Agave, a Joven (youthful) style of mezcal is produced which is soft and fruitful.Â
Do whatever you wish with this mezcal, but we do recommend starting with a couple of small sips to help warm up the senses. Mezcal needs to be taken care of and nursed for its true joy to shine.
